Satay Chicken Skewers and Egg baked rice

Hey Gang,

Welcome to our Kids in the Kitchen Class on Tuesday 11 July. We have another delicious restaurant class recipe that you are all going to love.

Our Satay chicken skewers are so tasty and you are going to learn so many new cooking skills during the class, like :

  • Tenderising and marinating the chicken
  • Prepping the chicken and adding it to the skewers
  • Making a home made satay sauce
  • Making your own egg baked rice

We think its going to be a dish you will make again and again this summer! If you cant make the class you can always make the dish in your own time.

Satay Chicken Skewers and Egg baked rice

Cancel that Chinese takeaway. We have the only recipe you ever need for the tastiest satay chicken skewers and baked egg rice.

Equipment

  • 1 Large Saucepan
  • 1 small saucepan
  • 2 Oven proof dishes
  • 8 Skewers
  • 1 Rolling Pin
  • 1 Scissors
  • 1 mixing bowl
  • 1 Chopping board
  • 1 sheet Tin foil
  • 1 wooden spoon

Ingredients
  

For the Rice

  • 2 125g Boil in the bag : easy cook long grain rice
  • 2 Spring onions
  • 3 Medium eggs

Chicken skewers

  • 3 Chicken Breasts
  • 1 Drizzle of Sesame oil
  • 1 tbsp Honey
  • 1 tbsp Soy sauce

Satay Sauce

  • 1 Garlic clove
  • 1 tsp Ginger puree or Fresh ginger
  • 1 tbsp Curry powder
  • 1 to 2 tbsp Sweet chili Sauce
  • 1 tbsp soy sauce
  • 3 tbsp crunchy peanut butter
  • 150 ml water

Instructions
 

  • Preheat the oven to 180c Fan
  • Over a medium heat in a large saucepan boil the rice according to the packet
  • Mean While we are going to prepare our chicken

The chicken skewers

  • Bash each chicken breast with the rolling pin until flat. Then using your scissors we are going to cut it into slices adding it to the mixing bowl
  • Once all the chicken is added to the bowl add the sesame oil, a tablespoon of honey and soy and give a good mix
  • Thread each chicken strip with the skewers and add to a lined baking tin leave to one side while we prep the rice

Egg baked Rice

  • Add a drizzle of oil to your other baking dish and add the drained rice
  • With a clean scissors snip over the spring onion and season with salt and pepper
  • Crack the eggs on top of the rice and cover the dish with foil
  • Place the chicken on the Top shelf of the oven and the Rice in the middle and oven bake for 20 to 25 minutes

Satay Sauce

  • To a small saucepan add the Garlic, ginger , curry powder, Soy sauce, sweet chili, peanut butter and water, give a mix and place over a low heat to simmer for 15 minutes
  • We will have a chat and do our quiz
  • Serve up by mixing the egg through your rice. Add a spoonful to a plate with 2 Chicken skewers on top. finish with a drizzle of satay sauce
