Sausage Hotpot
Hey Gang,
Sausage hotpot or ‘saw ships’ hotpot as Lils used to call it, is one to enjoy when comfort season has arrived.
This dish is super easy to cook and packs a punch in the flavour department.
To be honest, I could eat this type of grub all year round. I serve this piled high on top of rice or mash and never have any leftovers to freeze – the plates are licked clean!
Tip: When buying a good quality sausage look for a high pork content, around 70% or above.

Sausage Hotpot
Ingredients
- 12 good quality pork sausages
- 1 onion
- 2 garlic cloves
- 1 carrot
- 1 tbsp flour
- 1 tbsp dijon mustard
- 400 ml beef stock
- 200g baby potatoes sliced with skins on
- 1 few splashes of Worcester sauce
- 1 handful of chopped fresh parsley
Instructions
- Over medium heat in a little oil fry sausages in batches until golden take out and leave to one side
- Add onion and garlic frying for a min until soft
- Add diced carrot
- Add sausages back in
- Sprinkle in a tablespoon of flour
- Add hot stock quarter by quarter stirring as you add
- Dollop in dijon mustang and a few splashes of Worcester sauce
- Sprinkle in fresh chopped parsley
- Finish with 2 layers of finely sliced baby potatoes
- Cover and oven bake at 180c for 40 mins
- Crisp up potatoes under the grill for a min before serving
