Salmon en Croute
Welcome back to kids in the kitchen, lil,s is making salmon en croute which is a super tasty way of getting more salmon onto the meal plan. If you are not a fan of salmon you can use white fish like cod, which works really well with our lemon and chive butter.

Salmon en Croute
Equipment
- 1 mixing bowl
- 1 Lined baking tray
- 1 Scissors
- 1 spoon
Ingredients
- 4 fresh salmon darnes, skinned and boneless
- 2 sheets ready rolled pastry puff
- 1 fresh lemon
- 100 g butter
- 1 bunch fresh chives
- 2 2 egg yolks whisked yolks
Instructions
- Preheat the oven to 180°C fan.
- Prepare a baking tray large enough to hold 4 salmon darnes
- Unroll the first pastry sheet and cut into 4,
- Place each salmon darn in the centre of each pastry quarter
- Season well with salt and pepper
Garlic butter chive butter
- Make a garlic chive butter by crushing the garlic, snipping the chives and mixing with the butter,
- Add the zest and a good squeeze of lemon juice
- Spread a thick layer of the lemon garlic chive butter on top of the salmon, then top with the second sheet of pastry.
- Tuck the top sheet around the salmon squeezing the two sheets and pressing the edges with a fork to seal the top of the pastry, brush the edges with a little egg yolk,
- Bake in the preheated oven for 40 minutes, until golden all over.
