Meatball subs in speedy marinara sauce with pasta salad

Thank you for all the fabulous food photos on the break! You have been really cooking up a storm.

We have a fun jammed packed class this week.

We are making Meatball subs, in a speedy marinara sauce with Pasta salad, so we are relying on loads of the cooking skills you have mastered in the past classes.

Equipment

  • 2 Saucepans
  • 1 Large mixing bowl
  • 1 Pair of scissors
  • 1 Lined baking tray
  • 1 Small bowl
  • 1 Vegetable peeler
  • 1 Sharp knife

Ingredients
  

For the meatballs

  • 500 g mince beef (at least 8% fat)
  • 2 tbsp buttermilk
  • 100 g bread crumbs
  • 1 tbsp oregano
  • 1 bunch of spring onions
  • 2 cloves garlic grated
  • 1/2 tsp dried chillies
  • 1 Couple of handfuls flat-leaf parsley leaves chopped
  • 50 g grated Parmigiano

5 minute marinara sauce

  • 2 tbsp rapeseed oil
  • 2 cloves of garlic
  • A handful of freshly torn basil Chopped, about 2 tablespoons
  • 2 tbsp tomato puree
  • 100 g passata or tinned tomato
  • 1 tsp sugar
  • 1 tsp dried oregano
  • 4 hot dog rolls or mini French baguettes
  • 200 g cheddar and mozzarella mix cheese

For the pasta salad

  • 200 g bow-shaped pasta, or use your favourite shape
  • 1 tbsp honey
  • 1 tbsp mayonnaise
  • 1 red pepper
  • ½ small cucumber
  • 2 spring onion
  • 100 g sweet corn

Instructions
 

Meatballs

  • First Put your pasta on to boil for the salad
  • Place the mince into a large mixing bowl and punch a well into the center of the meat.
  • Fill the well with the butter milk, bread crumbs, snipped spring onion, garlic, chili flakes, parsley, parmesan , oregano, and a little salt and pepper.
  • Mix up meatball ingredients until well combined, yet not over-mixed.
  • Divide the mix into 4 equal parts, roll each part into 4 balls, and space equally onto a nonstick baking sheet.
  • Place meatballs in the oven and roast for about 15 to 20 minutes.
  • Break a meatball open and make sure the meat is cooked through before removing it from the oven.

To make your marinara sauce

  • place a medium saucepan over medium heat.
  • Add oil and garlic. When the garlic starts sizzling, add passata or tinned tomato's , herbs and tomato puree.
  • season the sauce with salt and pepper, and add a pinch of sugar.
  • Bring sauce to a bubble, reduce heat, and simmer on a low heat until meatballs are removed from the oven.

Meanwhile, make your pasta salad

  • While the pasta cooks, mix together your honey and mayo
  • Dice the red pepper with your scissors
  • Slice the cucumber into ribbons with a peeler and cut into a fine dice with the scissors or using the bridge method to slice with a knife
  • Also, slice the 2 spring onions with your scissors
  • When the pasta is cooked drain it with a colander and add to a bowl and mix with your sliced veg and honey mayo dressing

To finish

  • Half the rolls, and top with the mozzarella and cheddar mix or torn mozzarella ball
  • Warm the rolls in the oven for 5 minutes before serving
  • Fill the rolls with meatballs, and a drizzle of sauce
  • Serve with pasta salad
  • Devour and enjoy
