Lemon Pepper cod burgers
As an island nation, we definitely don’t eat enough Fish
So with that in mind, We are making a delicious crispy lemon pepper cod burger,
Just in time for evening Dinner
Hopefully, after our class, it will be a firm fixture on the weekly meal plan

Lemon Pepper cod burgers
Equipment
- 2 mixing bowls
- 1 flat plate
- 1 Lined baking tray
Ingredients
- 4 cod filets
- 100g plain flour
- 3 medium eggs
- 200g bread crumbs panko
- 1 tsp onion powder
- 1 tsp paprika
- 1 tsp garlic powder
- 1 pinch cayenne pepper
- 1 pinch salt and pepper
- 1/2 lemon zest
- 4 4 ciabatta rolls or burger buns
- 1 head lettuce iceberg
- 2 tbsp mayonnaise or ketchup
- 4 slices cheddar cheese
Instructions
- Get your adults to preheat the oven to 180c fan
- Firstly we are going to get our Breading station ready
- Add flour onto a large shallow bowl and spread out.
- Crack the eggs into another shallow bowl and whisk
- To a mixing bowl add the panko and seasonings
- Check the cod for bones, if there are any bones they will be in a straight line we are going to show you how to cut them out with sharp scissors
- Pat the cod dry with a paper towel.
- Dredge each piece of cod in flour, coating all around, shaking off excess.
- Then, dip cod into whisked egg, shaking off excess
- Finally, dredge cod in panko bread crumbs, coating all around.
- You can place it on a lined baking tray while we coat all the cod
- When all the cod is coated we are going to bake it for 25 minutes in the oven
- Getting your adult to turn each cod fillet after 12 minutes
- Meanwhile, we are going to tidy our workstation and get our ciabatta ready

- Prepare the lettuce by washing it and patting it dry
- Then cut it into nice thin slices with scissors and add it to a bowl
- Build your burger buns by adding the lettuce on the button and adding a smear of mayo to the top of the bun
- When your cod is cooked, place it on top of the lettuce, add cheese and finish with your ciabatta hat.
