For the cake:

  • 200 g butter softened 🧈
  • 200 g Gem caster sugar 🍬
  • 4 large eggs 🥚
  • 200 g GEM self-raising flour 🌾
  • 1 tsp GEM baking powder 🥄
  • 100 ml milk 🥛
  • 1 tsp vanilla extract optional 🌸

For the chocolate frosting (mud):

  • 200 g unsalted butter softened 🧈
  • 400 g GEM icing sugar sifted 🍬
  • 50 g cocoa powder 🍫
  • 2-3 tbsp milk 🥛

For decoration:

  • 10-12 oval-shaped biscuits 🍪
  • 100 g GEM dark or milk chocolate chips 🍫
  • White icing pen for writing “RIP” 🖋️
  • 100 g GEM raisins for “mud” 🧙‍♂️
  • 2-3 tbsp GEM desiccated coconut for texture 🌴

Instructions

  • Preheat the Oven 🕸️
  • Preheat your oven to 180 FanGrease and line a 9 x 13-inch rectangular cake tin with baking parchment.

Decorate the Biscuits (Headstones) 👻

  • Dip each oval biscuit into GEM melted chocolate chips, coating them completely. Place the biscuits on parchment paper and allow the chocolate to set.

Make the Cake Batter 🎃

  • In a large bowl, Mix together the softened butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift the flour, baking powder, into the bowl and gently fold into the mixture. Stir in the milk and vanilla extract until smooth and well-combined.
  • Bake the Cake 🎂
  • Pour the batter into the prepared tin and spread it evenly.
  • Bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean. Let the cake cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.

Prepare the Chocolate Frosting 🍫

  • In a bowl, beat the butter until creamy. Gradually add the sifted icing sugar and cocoa powder, beating until smooth and fluffy. Add milk, one tablespoon at a time, until the frosting reaches a spreadable consistency.

Write on the Biscuits ✍️

  • Once the chocolate on the biscuits is set, use a white icing pen to write “RIP” or other spooky messages on each biscuit.

Assemble the Graveyard Cake 🎃

  • Spread the chocolate frosting evenly over the cooled cake to create a “mud” effect. Press the chocolate-covered biscuits upright into the cake to resemble headstones. Scatter raisins around the base of the headstones for extra “mud” texture. Lightly sprinkle desiccated coconut over the cake for an eerie effect.

🎃 Serving and Storage 🎃

  • Serve as part of a Halloween dessert table! 🎃🍰 Store leftovers in an airtight container for up to 3 days. 🕸️👻
  • Enjoy your spooky and delicious Halloween treat! 🎃💀🍫
