Crushed Potato and Chorizo Tray Bake

Ingredients
  

  • 600 g baby potatoes
  • 130 g sliced chorizo
  • 1 red onion sliced into wedges
  • 1 red pepper
  • 2 tbsp rapeseed oil
  • 1 tbsp paprika
  • 1 tsp smoked paprika
  • 1 tsp dried chilli
  • 4 free range eggs
  • 1 courgette diced

Instructions
 

  • Parboil potatoes for 6 minutes
  • Preheat oven 180c
  • To a large baking tray add the sliced chorizo, onion pepper, diced courgette and potatoes
  • Crush each potato with a potato masher
  • In a small bowl mix the oil with paprika chili and season with salt and pepper
  • Pour over the traybake and mix
  • Oven-baked for 30 mins turning the potatoes after 15
  • Crack in 4 medium free-range eggs and put back into the oven for 5 minutes
