Crushed Potato and Chorizo Tray Bake

Crushed Potato and Chorizo Tray Bake
Ingredients
- 600 g baby potatoes
- 130 g sliced chorizo
- 1 red onion sliced into wedges
- 1 red pepper
- 2 tbsp rapeseed oil
- 1 tbsp paprika
- 1 tsp smoked paprika
- 1 tsp dried chilli
- 4 free range eggs
- 1 courgette diced
Instructions
- Parboil potatoes for 6 minutes
- Preheat oven 180c
- To a large baking tray add the sliced chorizo, onion pepper, diced courgette and potatoes
- Crush each potato with a potato masher
- In a small bowl mix the oil with paprika chili and season with salt and pepper
- Pour over the traybake and mix
- Oven-baked for 30 mins turning the potatoes after 15
- Crack in 4 medium free-range eggs and put back into the oven for 5 minutes
