Cod Fajita Platter

Week Four: We are cooking a delicious cod fajita platter. With this recipe, We are looking after the younger guests who will absolutely devour our Mexican style platter.
This recipe Makes a feast that will feed 15 to 20 guests.

Cod Fajita Platter
Ingredients
- 8 fresh cod fillets sliced
- 3 free range eggs
- 400 g breadcrumbs
- 1 pack of 3 mixed peppers
- 1 bulb of garlic
- 2 tbsp ground cumin
- 2 tbsp oregano
- 2 tbsp garlic powder / salt
- 1 tbsp tomato puree
- 2 tsp smoked paprika
- 2 tsp paprika
- 1 pinch of cayenne pepper
- 3 avocados
- 4 red onions
- 100 g cherry tomatoes
- 3 limes
- 1 good bunch of chopped fresh coriander
- 1 good drizzle of honey
- 1 drizzle of rapeseed oil
Instructions
For the veg
- Start by preparing your mixed peppers, garlic and onion
- Do this by slicing the peppers, chopping 2 red onions into quarters and smashing 6 garlic cloves
- Add to an ovenproof dish and drizzle with rapeseed oil
- In a bowl mix together your fajita spices adding half to the tray and saving the other half for your crumb
- Add a drizzle of honey and tomato puree to the tray and give a good mix, leave to one side until you bread your cod
For the cod
- Slice your cod into goujon size pieces removing any bones like shown in the video
- Add the other half of the spices to the bread crumbs and crumb your cod by dipping in egg and then the spiced crumb
- Add to a lined baking tray and bake the veg and cod in the oven for 25 minutes
For the salsa and guacamole
- For the guacamole mash 3 avocados, finely dice one red onion, add the juice of one lime and mix together. Season with salt and pepper
- For the salsa, dice the cherry tomatoes and dice the other red onion, add lime juice and finish with chopped fresh coriander
To finish
- Slice fresh tortilla wraps, drizzle them with oil and add a sprinkle of smoked paprika
- Bake for 10 mins
