Hey guys,

Welcome to our kid in the kitchen class this Tuesday the on 16th August 2022.

We are making chicken fajita Traybake, Just in time for evening Dinner. This is a great summer recipe for the whole family to cook and dig in together and has been one of our most popular kids in the kitchen classes this year.

Hopefully, after our class, it will be a firm fixture on the weekly meal plan.

Chicken Fajita Traybake

This is a great summer recipe for the whole family to cook and dig in together.

Ingredients
  

  • 3 Sliced free range chicken breasts
  • 3 Mixed peppers
  • 1 Red onion
  • 1 tsp Ground cumin
  • 1 pinch Cayenne pepper
  • 2 tsp Smoked paprika
  • 2 tbsp Tomato paste
  • 2 tsp Dried oregano
  • 1 pinch Sugar
  • 2 tbsp Crème fraiche
  • 1 Handful of sniped fresh chives
  • 8 Small tortilla wraps

Instructions
 

  • Preheat the oven to 180c fan
  • Mix the fajita spices together in a small bowl
  • With clean sharp scissors Cut the chicken breasts into 2cm wide strips
  • Peel your onion and get an Adult to help cut it into wedges
  • Prepare your peppers by pushing the stalk into the pepper and pulling it out, removing the seeds and chopping with clean scissors
  • Add to a large roasting tray –don’t overcrowd the tray
  • Drizzle over the oil, the spice mix and some salt and pepper
  • Mix everything together well with your hands (the messy bit!)
  • Roast at the top of the oven for 20-25 minutes until the chicken is cooked and the peppers and onions are soft
  • Meanwhile, For a smooth salsa, mix the tomato paste together with the oregano and a pinch of sugar in a separate bowl, Season with a little salt and pepper
  • Wrap the tortillas in foil and put them in the oven under the traybake for the last 5 minutes to warm through
  • Scatter a little fresh parsley or coriander leaves on the traybake and serve everything together with the crème Fraiche, chives and grated cheddar, in the middle of the table for everyone to tuck in
