 Cauliflower and broccoli mac and cheese with a cheese puff topping 

Hey gang, welcome to your Kids in the Kitchen Class on June 18th. We are making a delicious dish that was requested by one of our fabulous members.

“Oven Baked Mac and Cheese” We are sneaking in a few veggies to by adding the broccoli and cauliflower. Sure give them a try and don’t worry if you don’t like them you can always pick them out (shhhh I wont tell any one).

We are going to have great fun during class, learning lots of new skills like making a homemade cheese sauce and preparing the cauliflower and broccoli.

Macaroni with homemade cheese sauce. Baked in the oven

Oven-baked Mac and cheese

A Tasty Homemade cheese sauce mixed with elbow pasta with some hidden cauliflower and broccoli.
Perfectly matched with some Garlic bread.

Equipment

  • 1 mixing bowl
  • 1 Chopping board
  • 1 Scissors
  • 1 Large Saucepan
  • 1 oven proof dish
  • 1 Small bowl
  • 1 Baking tray

Ingredients
  

  • 400g elbow or penne pasta
  • 1 small head cauliflower
  • 1 small head broccoli
  • 250 g Mascarpone cheese
  • 250 g Mozzarella and cheddar mixed saving some for the top
  • 1 Chicken stock pot
  • 300 ml Warm water
  • 1 tsp Dijon mustard
  • 1 tsp Nutmeg
  • 200 g Tuc Crackers
  • 6 Par baked rolls
  • 200 g Butter
  • 2 Garlic cloves
  • 1 Bunch of fresh parsley
  • 200g cheese puffs ( like wotsits )

Instructions
 

  • Pre heat the oven to 180c Fan
  • Prep The broccoli and cauliflower by turning each head side down and slice the florets
  • Add the broccoli and cauliflower to a large saucepan with the pasta.
  • Pour over warm water and simmer for 10 minutes. meanwhile we will make our Cheese sauce
  • To a large mixing bowl add the Mascarpone cheese
  • Pour in the warm water and stock pot and mix until the stock pot had dissolved
  • Add 200g of cheddar and mozzarella mixed reserving some to sprinkle on top
  • Season with salt and pepper and add the nutmeg and mustard
  • When the pasta and veg has cooked al dente, drain and add it to the cheese mix
  • Transfer it to an oven proof dish and sprinkle the remaining cheese and a little crushed Cracker and cheese puffs on top. Leave to one side while we make our garlic bread
  • Make your garlic butter by adding 2 crushed garlic cloves and snipped fresh parsley to a small bowl, mix in the butter
  • Slice the rolls in half with your scissors and butter them
  • Add to a lined baking tray
  • Bake both in the oven, the Mac and Cheese on the top and garlic bread in the Centre for 20 minutes
  • Enjoy! Well done guys, you have made another fabulous meal!
