Cajun Rice

Our one-pot Cajun rice is so handy (with only one pot to was up) and really delicious too.

Cajun Rice
Ingredients
- 1 garlic clove crushed
- 1 white onion
- 100 g sliced chorizo
- 100 g sweetcorn
- 1 red pepper diced
- 2 125g boil in the bag rice
- 1 tsp smoked paprika
- 1 tsp cajun seasoning
- 800 ml chicken stock
- 100 g parmesan or smoked cheese
- 1 dollop of crème Fraiche
- 1 drizzle of Rapeseed oil
Instructions
- Place a heavy-based saucepan over medium heat and add a drizzle of rapeseed oil
- Sautee your diced onion and crushed garlic clove in the oil for 2 minutes
- Now add the diced red pepper, sliced chorizo and sweetcorn and fry for another 2 minutes
- Sprinkle in 2X 125g of boil in the bag rice (removing the bags) stir for 2 minutes to absorb those gorgeous flavours from the pot
- Pour over 800ml of hot chicken stock, cover with a lid and simmer for 20 minutes
- Remove the lid and give a good mix!
- Now you have it, delicious fluffy rice made all in one pot!
- Serve with a sprinkle of fresh parsley and shaving of parmesan or smoked cheese.
- Oh and a dollop of crème Fraiche.
