This seaside crumble is a great way to get the fish into the smallies, if it isn’t their thing. It’s also a great introduction to Fish for babies.(because the cod is really subtle and the recipe tastes so creamy)
I’ve been trying to get more fish into the family for a while now.. I love fish, and I’ve mentioned before if I was out for a meal, I always order fish.
My other half and Lils” both aren’t that great on the fishy fish, they don’t like salmon or prawns (which I love) so I’m trying to break them in gently.
This dish is super easy to cook but tastes posh enough to have as a “Friday night dinner”.. with a glass of vino or two (for mammy and daddy, when the kiddos have gone to bed)
it,s also a good one if you have a few buddies and their kiddies over for lunch..
For any slimming world folk,s this dish is free using the parmesan as your healthy extra a and bread crumbs as your healthy extra b.. it really tastes like a cheat meal.
- 4 cod fillets
- 1 small tin of sweetcorn/ garden peas.. (whatever you prefer)
- 2 cloves of garlic
- a handful of fresh chives
- 250g creme fraiche (fat-free if you’re doing slimming world )
- 1 chicken stock cube
- 4 slices of wholemeal brown bread (whizzed up in the blender)
- 160g parmesan cheese
Heat a large pan with a drizzle of olive oil/fry light on a medium heat
check your cod for bones.. if you find bones, pick or slice them out
Add the cod to the pan, and fry for 5 mins each side..
Then flake with a fork.. keeping the flakes large
Add corn, crushed garlic and crumble the chicken stock cube over, season lightly.. and add creme Fraiche
snip the chives (keeping some aside for the crumble) and stir them into your cod.. leave on a low heat for 10 mins while you wiz up your breadcrumbs and grate the cheese and add them both together
transform the fish mixture to a medium size oven proof dish
top with breadcrumbs and cheese.. sprinkle over chives and some black pepper
whack under the grill for around 8 mins until the crumble has gone golden
serve with wedges and greens and demolish x
