For years we couldn’t get Macaroni pasta shapes in the Irish Supermarket. So I always Made my Macaroni and Cheese with pasta shells, overall it had the same great taste. But now that they, re, available in the local budget supermarket, I’m playing homage to the way it was meant to be made!
Exactly what “Yankee doodle “called his feather in his hat. Macaroni!!!
This recipe is another one of my go-to recipes when I have a house full of kids and want to give them something that I know they will all eat. Don’t let the white sauce frighten you off, when you use warm milk and by adding it slowly, quarter pint by quarter pint there is less chance of lumps.. I bet if you check the kitchen right now you have all the ingredients already in (ok maybe not the nutmeg That’s it,s optional)
(serves a family of 4)
- 300 g macaroni pasta
- 6 slices of you favourite bacon
- 1 tablespoon of butter/ margarine
- 1 tablespoon of flour
- 1 pint of warm milk
- 150g of cheddar cheese grated
- 1 teaspoon of nutmeg (optional)
- (veggies you can add if you wish, peas, sweet corn, fried onion and mushroom all optional)
chop the fat of the bacon and fry separately in a small pan until crispy and leave to one side.
cook pasta according to packet
warm your milk, (a minute in the microwave will do)
over a medium heat melt the butter,
when melted add your flour and mix with a whisk.
when both is combined, slowly add your warm milk, quarter pint mix, quarter pint mix until you have a white sauce. (if you do end up with any lumps just sift the sauce into another saucepan, I won’t tell anyone 😉 )
add in the grated cheddar and mix until all the cheese is melted
finally, add your nutmeg and bacon and macaroni, Mix and serve
So that’s it the ultimate in comfort food and an American classic, Enjoy x
