Sausage Casserole

I’ve just looked out the window and its snowing out there. Winter has arrived with a bang, with no warning. Comfort sausage-casserole-5food season has landed, warming stews and casseroles that give you a hug with every bite on a cold day. (I love snuggling in on a winter evening)  This Sausage casserole has been a staple in our house  for years,   I’ve been on the look out for a  healthier  tastier sausage (before I shared it with you guys). It took me a while but I found them this  week in the shape of  the little good company sausages which are now sold in Dunnes stores in Ireland, (they have been around the Uk for a while) .. This sausage casserole is super easy to cook, packs a flavour punch and is  a family favourite in One Yummy Mummy hq.. we serve it piled high on top of rice and never have any leftovers to freeze,,, (plates are licked ) no shame

  • 12 good little sausages
  • 1 onion
  • one garlic glove
  • 1 pepper
  • 1 carrot
  • 2 teaspoons of sweet paprika
  • 1 tablespoon of tomato puree
  • 1 carton of passata

Serves a family of 4 sausage-casserole-1


Pre-heat oven  180c gas mark 4 you will need a deep frying pan (or a wok) and a casserole dish

Chop your sausages and veggies into bite size chunks

crush the garlic clove

heat a pan on a medium heat with a teaspoon of olive oil.. fry up the sausages for around 10 mins getting a bit of colour on them and scoop with a slotted spoon and leave to one side

now add the veggies and Garlic soften for 10 mins  chuck back in the sausages and the paprika and mix

pour on  passata and add a tablespoon of tomato puree and give a good mix…

transfer the whole lot to a casserole dish and cook in the oven for 50 mins sausage-casserole-3

serve with rice… and try to share with the kids x
