Prepare the rice according to the packet instructions. When cooked, rinse it and give it a good drain and leave to one side.
Over medium heat, add the sesame oil, soy and honey to the wok.
Add in the garlic and ginger, frying for a minute.
Scatter in all the veggies and stir fry for a further 5 minutes.
Add in the cooked rice and fry for 2 minutes.
Make a hole in the middle of the rice and drop in 1 egg.
When the egg is fried, break it up with a chopstick and toss through the rice.
Repeat with the second egg.
Finish with another splash of soy and a scattering of sesame seeds.
