Taco Mince & Homemade Fries
A perfect cheeky 'fake away' dinner with delicious, spicy mince and fresh, homemade chips.

For the mince
- 500 g lean beef mince
- 1 onion diced
- 2 garlic cloves crushed
- 1 red pepper sliced
- 1 green pepper sliced
- 100 ml passata
For the Taco Seasoning
- 1 tbsp smoked paprika
- 1 tbsp cumin
- 1 tbsp oregano
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 tsp cayenne pepper
For the Garlic Mayo
- 100 ml mayonnaise
- 2 garlic cloves crushed
- 1 tsp salt
For the Chips
- 4 new season potatoes
- 1 tbsp rapeseed oil
For the mince
Preheat the oven to 180 degrees/gas mark 4.
Put a large pan over a medium heat and fry your onion and garlic.
When softened, add in the mince breaking it up to cook thoroughly.
Make your Taco seasoning by adding to a bowl smoked paprika, cumin, oregano, cayenne pepper, salt and pepper
When the mince has browned, drain of any excess fat then add in the passata, peppers and your taco seasoning.
Simmer for 5 minutes.
Assemble your dish by taking your healthy homemade chips and topping them with a generous portion of mince, followed by the garlic mayo.
Finish with a scattering of cheese on top.
For the Chips
Clean the new potatoes by giving them a good scrub.
Slice length-ways into chips and place them into boiling water for 6 minutes.
Drain them off in a colander, giving them a good shake.
Lay the potato chips out on a baking tray and drizzle with rapeseed oil.
Bake at 180 degrees for 40 minutes, turning after 20 minutes.
Garlic Mayo
Peel the garlic cloves and crush with a fork on to a chopping board
Add a sprinkle of salt and mix, this will help puree the garlic
