Nacho Night

A gorgeous Nacho Night Feast were we will make our own fajita spiced chicken, homemade nachos, sasla, cheese sauce and guacamole

Equipment

  • 2 baking trays 1 for chicken and 1 for nachos
  • 2 Scissors 1 for chicken and 1 for nachos
  • 3 small bowls
  • 1 chopping knife
  • 2 chopping boards
  • 1 potato masher
  • 1 Fork
  • 1 spoon
  • 1 Teaspoon Measure
  • 1 Tablespoon measure
  • 1 Saucepan
  • 1 Grater

Ingredients
  

For the chicken

  • 3 chicken breasts
  • 1 tbsp rapeseed oil
  • 1 tbsp oregano dried
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp smoked paprika
  • 1 pinch cayenne pepper
  • season salt and pepper

Guacamole

  • 2 avocado's brown are riper
  • 1/2 lime
  • 1 pinch chilli dried or paste
  • 1 pinch garlic dried or paste

cheese sauce

  • 200g Cheddar or grated Mozzarella and cheddar mix
  • 1 tsp Corn Flour
  • 1 can evaporated Milk

Sasla

  • 1 beef / large tomato
  • 1/2 red onion
  • 1/2 lime
  • 1 bunch fresh coriander or parsley

Nachos

  • 4 tortilla wraps
  • 1 tbsp rapeseed oil
  • seasoning

Instructions
 

  • Preheat oven to 180c Fan and Line your two baking trays with parchment paper

For the chicken

  • With a scissors trim each breast removing any skin or excess fat and then slice into strips
  • add to a baking tray with a drizzle of oil and our own fajita spice seasoning
  • place in the top shelf of the oven and bake for 20 to 30 minutes

Nachos

  • cut the tortilla wraps into triangles with your scissors, add to a baking tray with a drizzle of rapeseed oil and seasoning. mix with your hands and spreading out on the tray. bake for 8 minutes in the bottom of the oven

Cheese sauce

  • Add the Cheese to a saucepan
  • Mix in the cornflour
  • Pour over the evaporated Milk
  • Place on a gentle heat stirring until the cheese melts into a silkily Sauce

salsa

  • Slice the tomato in half with your chopping knife using the bridge method
  • Using a spoon remove the seeds
  • Then dice with your knife and add your tomato to a bowl
  • Peel and slice the red onion using the bridge and claw method
  • Half the lime and squeeze it over the tomato
  • Snip with your scissors some coriander or parsely and give a good mix
  • Season with a little salt, pepper and a pinch of sugar

Guacamole

  • Slice the twist the Avocado
  • removing the stone with a spoon
  • scoop out the flesh with a spoon add to a bowl and mash with your potato masher
  • add the garlic, chili and Squeeze in the other half of the lime , give a good mix
  • bring to the table and serve your feast
