Mozzarella stuffed crust pepperoni pizza

Equipment

  • 1 mixing bowl
  • 1 wooden spoon
  • 1 Lined baking tray
  • 1 Pizza Cutter

Ingredients
  

  • 200 ml warm water
  • 300 g plain flour
  • 7 g packet fast-action dried yeast
  • 1 tbsp caster sugar
  • A good pinch of salt
  • 3 tbsp rapeseed oil plus a drizzle
  • 1 tablespoon tomato puree
  • A pinch of sugar
  • ½ tsp dried oregano
  • 1 to 2 125g fresh mozzarella ball
  • 250 g grated mozzarella and cheddar mix
  • toppings of your choice we used pepperoni slices, chopped chorizo and basil

Instructions
 

  • heat oven to 240C/220C fan/gas 9
  • Tear the mozzarella into strips and leave to one side
  • Add the packet of yeast to the warm water and sugar
  • Weigh the flour and add it to a mixing bowl and add the oil
  • Pour the liquid into the bowl and mix with a wooden spoon until the ingredients are well combined.
  • Tip out onto your work surface and knead for 5 minutes,
  • Roll out the dough to a pizza base, about 35cm wide. we can be rustic here
  • Dust a large lined baking sheet with flour and place the dough on top,
  • Use the mozzarella strips to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edges. you can add torn pepperoni too
  • Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust.
    Press firmly to stick the dough in place.
  • Add the tomato puree to the base and spread to the edges, add a sprinkle of sugar and oregano
  • and top with the grated mozzarella and cheddar mix
  • Scatter with your chosen toppings, we like fresh basil, pepperoni and extra mozzarella
  • Turn the oven down to 180c fan
  • Oven bake your pizza for 15 to 25 minutes
  • Well done guys, homemade pizza in less than an hour!
