heat oven to 240C/220C fan/gas 9
Tear the mozzarella into strips and leave to one side
Add the packet of yeast to the warm water and sugar
Weigh the flour and add it to a mixing bowl and add the oil
Pour the liquid into the bowl and mix with a wooden spoon until the ingredients are well combined.
Tip out onto your work surface and knead for 5 minutes,
Roll out the dough to a pizza base, about 35cm wide. we can be rustic here
Dust a large lined baking sheet with flour and place the dough on top,
Use the mozzarella strips to create a ring around the outside edge of the pizza base, leaving 1/2cm gap between the edges. you can add torn pepperoni too
Brush a little water inside the mozzarella ring then fold over the outside edge to enclose the mozzarella and create a stuffed crust. Press firmly to stick the dough in place. Add the tomato puree to the base and spread to the edges, add a sprinkle of sugar and oregano
and top with the grated mozzarella and cheddar mix
Scatter with your chosen toppings, we like fresh basil, pepperoni and extra mozzarella
Turn the oven down to 180c fan
Oven bake your pizza for 15 to 25 minutes
