Sieve the flour and bicarbonate of soda into a mixing bowl.
Rub the butter into the flour with your fingertips until it looks like breadcrumbs.
Add the rest of the dry ingredients. Mix well with a wooden spoon.
Pour in the buttermilk and mix again.
Sprinkle some flour onto your work surface.
Tip the dough onto the work surface and gently work it into a circular shape.
Make a cross shape on the top of the loaf.
Line a baking tray with greaseproof paper and pop the loaf on top.
Oven bake at 180 degrees for 40 to 45 minutes.
Leave to cool, then slather a slice with butter and strawberry jam.
Finish with some slices of Carbery Cracker smooth white cheddar.
