Spanish Chicken and Chorizo (with hidden veggies)

Spanish chicken and chorizo with a few hidden veggies flung in for good measure! Why?  Because a certain 3-year-old has been accustomed to picking them out of late. If they,re hidden she can’t pick them out (so don’t  go telling her)  If your kids or (adult man because they can be as fussy as the kids at times 🙂 ) doesn’t mind the veggies there’s no need to hide the feckers. Cook your chicken and chorizo, fling in your veggies with oregano and paprika, add in the passata, simmer for 30 mins and your good to rock… The method I,m using below is the sneaky hidden veggie one. Cooked, either way, you still get the same sweet smokey taste, and clean plates guaranteed



Ingredients (serves a family of 4)

  • 4 chicken breasts
  • 150g chorizo
  • 4 cloves of garlic
  • 1 medium onion
  • 1 red pepper
  • 1 carrot
  •  400g of passata
  • 2 teaspoons of paprika
  • 2 teaspoons of oregano
  • 1 teaspoon of garlic salt


You will need 2 large pans  (One pan for the chicken and chorizo, the other for the veggies ) and a saucepan for your rice

Cook rice according to packet

heat one of your pans with fry light or olive oil on medium heat. 

chop the chicken and chorizo and cook for around 25 mins.

turn the pan down once it’s started to cook, while you work on your sauce

peel the garlic cloves no need to chop and chop the rest of veggies, chopping the carrot small because it take,s the longest to cook,

heat your other pan with olive oil or fry light on a medium heat

fling in all the veg and garlic and cook over medium heat for ten mins

add paprika, oregano and garlic salt, season with a little salt and pepper, and mix

pour the passata over the veg and cook for around 30 mins…

blend the veggie sauce once all the veg has softened

add the cooked chicken and chorizo… stir and serve with rice …
