Savory Mince

This is Autumn in Ireland

On a blustery day, I crave nothing more than a good old “mammy” dinner!!!..  Where you take just one mouthful and you’re transported back home panicking about your homework while watching the  Glenroe finishing titles…  it’s amazing the way food can transport you back in time. I remember eating savoury mince with ice cream scoops of potato as a child and still to this day  its nostalgia in a bowl  A warm fuzzy feeling on a wet day x  A hug from a granny who’s, no longer with us.  It’s just a classic and is still a huge favourite of our,s..  I hope you enjoy my take on it

500g of Extra lean beef
1 onion Grated
2 carrots  chopped

2 stalks of celery
small tin of corn or peas ( we like corn in the yummy house)

2  beef stock cubes (mixed with a hot pint of water)

a splash of Worchester sauce
1 tablespoon of parsley (fresh is best but if you have dried its ok )
1 tablespoon of thyme  (if you have fresh use it.. if not, dried will do)

1 bay leaf

1 teaspoon of corn flour mixed with a tiny drop of water to thicken

a little pinch of  black pepper and a little salt


mincePut  a Pan on the hob on a medium heat with a teaspoon of olive oil/ frylight

Soften onion, garlic, celery and carrot for 5 minutes

Now add the mince to the pan, browning it and breaking it up with a fork,

Drain off all the fat with a sieve, then return to the heat..

Adding  corn (or peas) with the pint of beef stock and  stir well..

sprinkle in parsley, thyme, and mix again

finish with a bay leaf and a splash of Worchester sauce

mix  cornflour with a dribble of cold water  in a cup and add to the pan, this will thicken the whole recipe

simmer on a low heat for 35 mins… season with pepper and a little salt

pour over a dollop of  creamy mash…
