Hey lovelies
This is a great wee budget-friendly time-saving pasta bake and in my book, as a busy mother you can’t have enough of these up your sleeves.
Especially now that the school term has started back.
I use Pancetta but in all honesty, you can use whatever you have in the fridge, (ham or bacon work really well too.)
A time-saving tip is boiling the broccoli and pasta together, saves with the washing up too eh!!
This one will be devoured by the whole family (even if a few in mine are still picking the broccoli out! ahem)

Ingredients
- 300g macaroni or penne pasta
- 65g pack cubed smoked pancetta
- half a head of broccoli florets
- 2 garlic cloves
- 1/2 teaspoon nutmeg
- 300 MLS milk
- 1 heaped tablespoon flour
- 1/2 teaspoon nutmeg
- 100g of cheddar cheese
- 40g parmesan
Method Serves 4
( you will need 2 saucepans and an overproof dish)
In a saucepan over a medium heat fry pancetta and crushed garlic
In the other saucepan boil pasta according to the packet placing the chopped broccoli florets on top to boil also
Whack in your tablespoon of flour and give a good mix
Pour in the milk quarter by quarter, letting the sauce thicken each time you add
Season with a little salt and pepper and add the nutmeg
Grate both kinds of cheese and add to the sauce reserving a little to scatter on top at the end
When the pasta and broccoli is cooked drain and rinse with water and add it to an oven proof dish
Pour over the creamy cheese sauce and mix
Scatter with the remaining cheese and pop under the grill until melted and bubbling
