Meatballs and Gravy

We are huge fans of Meatballs in marinara sauce in the yummy house, but when there’s a chill in the air I  just cravemeatballs-and-gravy-3 old school Meatballs and gravy, with a good scoop of creamy mash.. Simple good food, like “mammy used to make” .. I know some of you might want to add a drop of  red wine to the gravy.. (the alcohol will burn off in the cooking, so the kids will be fine, they might sleep better, but they will be fine) I never add wine to my gravy.. (because id rather drink my wine,) because growing up we never had wine in our gravy.. and I wouldn’t like to be getting notions… but if you have a spare glass knocking about go for broke and chuck it in…

  • 400g lean mince beef
  • 2 large onions
  • 1 beef stock cubes
  • 1 glass of red wine (OPTIONAL)
  • 1 tablespoon of flour
  • 1 pint of hot beef stock
  • 1 tablespoon of creme fraiche
  • fresh rosemary
  • fresh thyme
  • Black pepper

Method (serves 4)

You will need an ovenproof pan.. (or just a pan and oven proof dish) and mixing bowlmeatballs-and-gravy-1

Pre heat your oven to 180c

grate/ chop really small/ or in a food processor whizz up 1 onion..

add the mince, and a handful of chopped thyme with a little salt and pepper

get your hands in and give a good mix… rolling into small meatballs

Put the pan on a medium heat and add a drizzle of olive oil..

seal the meatballs in 2 batches…. when  sealed leave them to one side…

chop the other onion and brown on the pan… season with a little salt and pepper,

add a tablespoon of flour and give a good mix..meat-balls-and-gravy-2

slowly add your beef stock.. quarter by quarter stirring as you add  it… throw in a sprig of chopped rosemary , thyme and a glass of wine (if you have it)

blend with a hand blender…

add the meatballs back into pan cover and cook in the oven for 40 mins .. (if you haven’t an oven proof frying pan just transfer to an ovenproof dish with a lid)

after 40 mins take out of the oven and dollop a tablespoon of creme fraiche on top and mix…

serve with creamy mash x meat-balls-and-gravy-4
