Macaroni  Cheese bake 

For years we couldn’t get Macaroni pasta shapes in the Irish Supermarket. So I always Made my Macaroni and Cheese with fushi pasta, overall it had the same great taste but now we have Now macaroni pasta is readily available in all supermarkets we can make it just like they do in the states, ( I still like to mix a little fushi pasta in tho for texture)

This recipe is another one of my go-to recipes when I have a house full of kids and want to give them something that I know they will all eat. Don’t let the white sauce frighten you off, when you use warm milk and by adding it slowly, quarter pint by quarter pint there is less chance of lumps..  I bet if you check the kitchen right now you have all the ingredients already in (ok maybe not the nutmeg That’s  it,s optional)

(serves a family of 4)


  • 300 g macaroni pasta (and a little fushi if you like   )
  • 1 tablespoon of butter/ margarine
  • 1 tablespoon of flour
  • 1 pint of warm milk
  • 150g maturecheddar cheese grated
  • 1 teaspoon of nutmeg (optional)
  • (veggies you can add if you wish, peas, sweet corn, fried onion and mushroom all optional
  • Smoked ham is optional too
  • 200 g bread crumbs
  • A few sprigs of fresh thyme


cook pasta according to packet

warm your milk, (a minute in the microwave will do)

over a medium heat melt the butter,

when melted add your flour and mix with a whisk.

when both is combined, slowly add your warm milk, quarter pint mix, quarter pint mixing until you have a white sauce. (if you do end up with any lumps just sift the sauce into another saucepan, I won’t tell anyone 😉 )

add in the grated cheddar and mix  until all the cheese is melted

finally, add your nutmeg and season with salt and pepper

Pour in the cooked macaroni to your cheese sauce, transfair to a ovenproof dish

Chop your thyme and add it to your crumbs.. sprinkle them on top with a dust of black pepper

Whack under the grill untill the crumb has gone golden..

  1. Do you know I’ve never tried making this – and I’ve never really eaten it, but it looks like something August would love. Is it very milky / creamy to taste? I fecking love pasta, so mostly I’d be making it for myself! I always thought it was made with mozzarella. There you go now!

    • hey hun x hope all is going well with the pregnancy,,, it tastes really cheesy.. so if she likes pasta and cheese she will love it x
