I was a very late convert to sprouts. I never liked them as a child and used to hide them in under my leftover turkey. I think the old boil them to death method didn’t help that. Honey roasting them and adding bacon and Sesame seeds adds another dimension to them. My Recipe for honey roast brussels sprouts is ready in 30 minutes, coming out of the oven sweet and sticky, with a tiny bit of a crunch. Perfect for Christmas day while you’re letting the turkey have a rest, you just stick them in the oven and leave them to cook, no need to shake, toss or turn. ( the perfect opportunity to sneak in a wee glass of wine) 🙂
- 1 bag of Brussel sprouts
- 1 pack of pack of bacon lardons (I use smoked around 200g)
- 1 tablespoon of olive oil
- 1 tablespoon of honey
- 1 tablespoon of balsamic vinegar
- 1/2 garlic bulb
- 1 tablespoon of sesame seeds
Heat oven to 180c Gas mark 4
Cut sprouts in half .. remove little stem and outer leaves
add the sprouts to a mixing bowl with your bacon lardons
Drizzle over.. oil first… then honey… then balsamic vinegar and give a good mix.. season with salt and pepper.
transfer to an ovenproof dish with the lardons, placing the garlic bulb unpeeled in the centre cook
for 30 mins until golden…… after 30 mins squeeze the garlic bulb roasted garlic cloves will pop out, mix them through the sprouts and bacon and sprinkle over your sesame seeds to finish
and that,s it! These also taste great as a midweek meal with stir-fried noodles.
