In my teens I used to love those packets of golden savoury rice from the supermarket, you know the ones that you just add water to, so I’ve been trying for a while to make my own version without the additives and preservatives, (like my healthy Pot noodles ) for a while.
This recipe is as close as it gets, tasting so much better than any dried packet, with fresh veggies and juicy chicken and just as easy to cook too! “lils” would Live on this dinner if I’d let her ( now I’ll be honest she has just started to hand me the peppers by picking them out) but the rest is devoured, it’s such a handy midweek meal.

Ingredients
- 360 g easy cook rice
- 4 chicken breasts
- 1 garlic clove
- 1 red pepper
- 1 carrot
- 2 tablespoons of sweet corn
- 2 spring onions (scallions)
- 1 chicken stock cube in 100 mls water
- 1 tablespoon of soy sauce
- 1 heap teaspoon of turmeric mixed with a table spoon of water in a cup
Method
In a large saucepan cook your rice according to the packet
chop the chicken breasts, (small chunks work really well in this dish)
dice the red pepper (small again) grate or wizz up the carrot, slice your scallion and crush the garlic
add some olive oil or fry light to a large frying pan and put on a medium heat
put your chicken in the pan and fry for around 5 mins
add the veggies and garlic and cook for another 10 mins, stirring while the mixture cooks
pour over your stock cube with water and soy sauce , season with a little salt and pepper turn the hob down to low and simmer for 10 mins
When the rice is cooked drain all the water off and add your turmeric mixed with water and stir this through, this will turn your rice golden.. mix in chicken and veggies and serve x
