Fruity Curry (A great family curry)

With Halloween coming up this long weekend we, we’ve been flat out cooking, baking and painting.  remember my new kitchen… it’s hard work keeping it lilymae-paintinglooking new!!! We did some potato stamp painting with bat and pumpkin shapes, the bin liners came in handy (they double up as my witches costume too,  he he ) … “yum” had more crac painting her hands, to tell the truth . She was painting her hands brown, and I says to her “don’t  be painting your hand’s missus”… she says… I not missus… I a bear!!! waving her brown hands in the air…  quick thinking from the 3-year-old..

We made some spooky witches hats for Halloween too, you can find my easy recipe via the Echo fruity curry  here.  and have been devouring fruity curry…   with it being cold and flu season, I find this is a great one for sneaking in some extra vitamins because of all the fruit packed in, it’s a good one to have up your sleeve if you fancy a change from curry in a hurry too ) , . but sure, “yums” plate below speaks for its self …
fruity curry


  • 6 chicken breasts
  • 1 garlic clove
  • 1 fresh whole pineapple
  • 1 apple
  • 1 onion
  • 1 banana (yes a banana)
  • 2 tablespoons of mild curry powder.. taste… (if you  like more add more )
  • 2 tablespoons of low-fat  or full-fat coconut milk (your preference)
  • 1/4 pint of chicken stock
  • two tablespoons of sultanas (optional)



Heat oven to fan 180 C gas mark 4. (serves 4)

Cook the chicken breasts separately… I like to oven cook them by Covering the chicken with tin foil and cooking for 25 mins at 180c in the oven, It’s really juicy that way. but you can pan cook if you prefer


spray a large saucepan with olive oil/ fry light and put on a medium heatfruity curry

Roughly chop the onion, peel and core the apple, ,, chop the pineapple and banana and bung it all in your saucepan cook for 5 mins

add Low-fat/ full fat (whatever you like) coconut milk and chicken stock and stir, cook for 20 mins.

chuck curry powder and blend with a hand blender.

Finally add cooked chicken, sultanas and coriander (sultanas and coriander both optional) fruity curry

simmer on a low heat for a further 10 mins.
serve with fluffy rice

watch out it can be  addictive x Get messy, have fun, one yummy mummy

  1. My husband loves curry. I just made one last night, if only though I checked your blog first, I could’ve made this. It has all my hubby’s faves… coconut and banana 😉

  2. Hee hee when you said Banana I was thinking No not a banana! I’m a bit (lot) phobic of them. But bananas aside, this recipes sounds and looks amazing. Would it still be yum without the banana? I LOVE pineapple though 🙂 x
