Daddy’s Favorite curry sauce

My famous homemade curry sauce 

So I fessed up to it over on the Facebook page last night! My hubs Favourite curry sauce isn’t my chicken curry in a hurry!!! It’s a well-known brand, and it drives me nuts ( let’s just call the brand Mc Dowells, they make chips curry and chicken curry, red tub you get me ) So I put up a challenge to him and told him I could make the exact same curry sauce from scratch myself!! With no msgs, no colourings or preservatives!

well I only went and did it.. and wait for it…. he said it tasted even better Than “red tub, chips curry” My work here is done, My friends 😉

This makes a lovely chicken curry or curry sauce


4 chicken breasts (optional)

2 tablespoons of olive oil

1 garlic Clove

1 onion

1 tablespoon of tomato puree

2 tablespoons of curry powder (I used the Tesco mild one for this)

A teaspoon of each:

  • cumin
  • turmeric
  • coriander
  • All spice or mixed spice (the one used in fruit cake)
  • Garlic powder
  • Chilli
  • ginger
  • black pepper

one pint of hot chicken stock

cornflour to thicken


mix all the spices in a bowl with 2 tablespoons of olive oil

heat a large pan on a medium heat with a little oil

chop and soften the onion and garlic in the pan for around 5 to 10 mins

squeeze in the tomato puree and fry for around a minute

add in your spices and oil and mix

season with a little salt and pepper

put in your chopped chicken breasts (if you’re making chicken curry ) and cook for 10 Mins

pour in chicken stock and simmer for another 10 mins

thicken with a little cornflour and cold water (1 teaspoon of cornflour with a teaspoon of cold water, make a paste)

if you are just making curry sauce blend with a stick blender.

and that’s it… your very own chips curry and chicken curry!!! with none of the bad stuff making it my very own famous homemade curry sauce Ireland
