Chorizo and Red Pepper Pasta Bake

Hey lovelies,
You can never have enough pasta bake recipes up your sleeves. Especially now the weather’s getting colder. Nothing like a few carbs to warm us up eh? This Chorizo and Red pepper Pasta Bake is mainly made up of your cupboard stables. It makes a great mid-weeker when supplies are running low.
It’s also a handy after-school dinner, as there’s not much preparation too it.

The kid,s will adore it because it tastes like “pizza” pasta. (you can call it pizza pasta if you think it will help them eat it 😉 )

My girly today actually ate 2 bowls full.  Albeit picking a bit of the pepper out when she realised what it was.  (Because that’s the way she’s rolling these days)  It’s still a win in my book.

Can I just add that I also made this with my sister a few weeks ago,  we can both confirm, it pairs well with a glass of vino or two on a Friday night as well x


250 g Fusilli pasta
200 g of chorizo
2 cloves of garlic
1 red pepper
200 g passata
1 tablespoon of red pesto
1 tablespoon of dried oregano
1 tablespoon of dried basil
200 g of grated cheddar cheese


Serves 4
(you will need a saucepan and an ovenproof dish)
Preheat oven to 180 c Gas mark 4
Cook pasta according to the packet
While the pasta is cooking, crush garlic, chop the pepper into little cubes and slice your chorizo
When the pasta is cooked, add the red pepper, chorizo and garlic and mix
Season with salt and pepper
Pour in the passata and red pesto with your sprinkling of dried herbs and give another good mix.
Transfer the lot to an ovenproof dish and top with cheddar..
Place in on the bottom shelf of the oven and cook for 40 mins.

  1. Yum Yum Yum!
    Needed an easy recipe on Wednesday with Busy Mum Duties and rustled this on up.
    Kids loved it and plenty of left overs in the fridge for a Hangry Teenager coming in from school the following day.
    Defiantly one for the mid week list.
