hasn’t the weather just been majestic? We,ve been mainly cooking light lunches or having picnics in the garden.
grazing on jambon,s, mini pizzas or bacon and cheese tater tots.
Then the other night I actually had a dream That I was cooking this recpie of chicken meatballs in korma sauce!!!
How crazy is that?
Ok I,ll admit it do dream a lot about recipes and food, (daydream too, I think my brain could just be a big block of cheese)
This recipe was dreamed up, cooked up and served up all in my sleep ( I’ve lost the plot )
like I could of went anywhere with the dream and served it up to Jamie Doran or Chris Martin, but no it was just lils and the hubs!
I’m really looking forward to hearing how you guys get on with this one,
after all its the stuff of dreams (yep I went there)

Chicken meatballs in korma sauce
Ingredients
Meatballs
- 400g chicken mince
- 100g breadcrumbs (or 2 slices of bread blended)
- 1 onion
2 garlic cloves - 1 chicken stock cube crumbled
1 tablespoon curry powder mild
season with salt and pepper
small handful of fresh parsley
For the Korma sauce
- 1 onion
- 2 garlic cloves
- 1 centimeter cube ginger
- 2 tablespoons of tomato puree
- 1 tablespoon of mild curry powder
- 1 tablespoon gram masala
- 1 teaspoon of sweet paprika
- 1 teaspoon of turmeric
- 1 can of coconut milk
Method
For the meatballs, ( makes 9)
preheat oven to 180c
crush garlic and chop ginger and parsley,
grate the onion or blend it if you have a blender
add chicken mince to a large mixing bowl and crumble in a chicken stock cube (the Oxo ones are the best for this)
season with salt and pepper and add in the breadcrumbs, onion garlic, and ginger
sprinkle in the curry powder and get your hand in and give a good mix
make 9 meatballs,
get a muffin tin and spray each hole with oil/frylight
add a meatball to each hole and oven bake for 20 minutes (this is the easiest way to make meatballs)
while the meatballs are cooking make your sauce
put a little coconut oil/ frylight / olive oil a large pan
Fry garlic and ginger
add diced onion and soften
add tomato puree and then the spices
finish with coconut milk simmer for 20 mins
add meatballs and serve with rice

Hi there, making this at the moment. It doesn’t say in the ingredients list about ginger for the meatballs but it does in method. Is this a typo?? Can’t wait to try this. Thanks
