Cheesey Chicken Goujons with Roasted Asparagus

Kids love ketchup! So let’s get some good stuff to dip into it. These chicken goujons taste really creamy with a sweet kick (cinnamon). The asparagus just needs to be washed, snapped at the woody bit and bunged in the oven for 10 minutes. It’s a great veg for dipping (that’s why my little yum loves it).

I serve this dish with a few homemade oven chips and a blob of ketchup. Tastes like a treat but it’s wholesome and home cooked. You won’t be wrestling over dinner – a win/win for Mammy and Daddy.

Here is a wee timing tip – all of this dish cooks in the oven. The chips go in first for 50 minutes then while the chips are cooking get the chicken ready. The chicken goes in after 25 minutes then the asparagus goes in for the last 10 minutes.

You can put the asparagus on the same tray of the chips. This will feed a family of four easily! Jolene x

 

Ingredients:

  • 6 rooster potatoes
  • 3 chicken breasts
  • 1 cup breadcrumbs
  • 1 cup grated Parmesan cheese
  • a chicken stock cube
  • 2 eggs
  • 1/2 teaspoon cinnamon
  • olive oil in spray bottle
  • 1 bunch asparagus
  • 1 teaspoon garlic powder

 

Method:

Preheat the oven to 180°c / gas mark 4. You will need 2 oven trays sprayed with olive oil, a large bowl, a plate and a saucepan.

Peel the potatoes then slice them length-ways to make rectangular chips.

Add the potatoes to a saucepan of boiling water and cook for 6 minutes, then drain and place on a tray sprayed with olive oil. Put in the oven on the top shelf.

Get the chicken ready by slicing it into strips.

Beat the egg in a large bowl and add in the cinnamon.

Add the grated Parmesan cheese to the breadcrumbs and crumble in the chicken stock cube. Put onto a plate.

So now the messy bit! Dip each piece of chicken into the egg, then the crumb mix, making sure they’re well covered, then place them onto the oiled baking tray.

Put into the oven on the middle shelf when the chips have been cooking for 25 minutes. (Give the chips a shake when putting the goujons into the oven.)

After a further 15 minutes, turn the goujons carefully.

Sprinkle the asparagus with the garlic powder and place in with the chips for the last 10 minutes to cook.

Check the chicken is fully cooked before serving then enjoy!
