Did you feel that little bit of sunshine today?
it’s something we haven’t felt in ages,
Jes doesn’t it really do you the world of good
ah I’m sick of it, sick of the snow, the cold, the dark and dreary days of the longest winter of all time.
So today I ran with the little bit of sunshine and made a batch of my barbeque chicken drumsticks.
Drumsticks are really economical, you can pick them up for around €3 in any supermarket.
(But sometimes when you pick them up you can be a bit baffled on what to do with them)

My homemade barbeque rub and glaze are really easy to throw together and by cutting all the skin off your cutting the fat too.
By baking them in the oven your finished drumstick is succulent, juicy with a distinctive smokey and sweet barbecue flavour
when I’m serving younger kids I usually cut the chicken off the bone, but any school goers will love picking it up and chomping it off the bone caveman style
These are delicious served with wedges, corn on the cob and salad

Ingredients
8 chicken Drumsticks
For the dry rub
- 1 tablespoon of brown sugar
- 1 teaspoon salt
- 1 teaspoon paprika
- 1 teaspoon smoked paprika
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic salt
- 1 teaspoon onion powder
Homemade barbeque glaze
- 2 tablespoons honey
- 2 tablespoon soy sauce
- 2 tablespoons ketchup
- 1 tablespoon smoked paprika
Method (serves 4)
You will need 2 mixing bowls and a large lined baking tray
preheat over to 180c
with sharp scissors cut all the skin off your Drumsticks and any fatty bits
in a bowl mix all your dried spices for your rub
cover each drumstick with the dry spice rub
place onto your baking tray and oven bake for 40 mins turning each drumstick after 20 minutes
in another mixing bowl combine the honey, soy, ketchup and smoked paprika to make your glaze
after 40 mins brush each drumstick with the barbecue glaze
place back into the oven to bake for a further 10 minutes
check that the chicken is cooked through, with no pink showing (it should be cooked through after the 50 mins and really juicy)
serve and demolish
