hey, guys welcome to the community section of the blog, (Just look at it as a wee recipe swap corner.) You may all know I love a home cook, ( I am a home cook) they are the heart of every home! With little nuggets of wisdom hidden inside that no amount of chef training will teach you. They feed their nearest and dearest every day, so it’s basically cooking with love!
What I want to do here is “champion” the home cook and share their recipes because as far as I’m concerned its them recipes that should be out there, the ones that are cooked in our homes every week!! The food that are families eating across the nation.
So First up I have the lovely Jessica O Farrell’s “sweet potato and coconut curry. Jessica shared the recipe first over on the Facebook group a couple of of weeks ago and I couldn’t wait to try it. Jessica has a very similar ethos as My self when it comes to food. She wants to be healthier and that’s reflected in the food she eats and cooks for her family. She loves the odd treat too (don’t we all, sure we have to live) but the majority of her diet is healthy home cooked food. Meals that are suitable for all her family including her 20-month-old. Jessica’s sweet potato and coconut curry
Ingredients
3 chicken breasts
1 large sweet potato cubed
1 onion
1 garlic clove
1-centimetre cube ginger
2 tablespoons of tomato puree
1 tablespoon of mild curry powder
1 tablespoon gram masala
1 teaspoon of paprika
1 teaspoon of turmeric
1 can of coconut milk
Method
heat a large pan with oil/fry light
chop onion and chicken, grate ginger and crush garlic, cube the sweet potato.
cook the chopped chicken for 20 mins on the pan, when it’s cooked remove with a slotted spoon and leave to one side
fry ginger and garlic on the pan for around 20 seconds then add the onion and cook until golden
add cubed sweet potato and mix in the tomato puree
Sprinkle over your spice and season with salt and pepper
Finally add the chicken back in and pour in the coconut milk and simmer for 25 mins
until the sweet potato is cooked…
