Autumn spiced brown soda Bread

Autumn Spiced soda bread 

Ingredients

  • 50g unsalted butter diced
  • 150g Little Mill Plain Plur (this comes in a larger 12.5kg bag on their webshop)
  • 250g Little Mill Plain Wholemeal Flour, plus a little extra for dusting
  • 15g soft dark brown sugar 
  • 1 tsp bicarbonate of soda
  • 1 ½ tsp mixed spice
  • 150g fruit mix
  • 300mls buttermilk

Method

Preheat the oven to 200C/180C fan/gas 6. 

Start by sifting The Little Mill plain plur and 1 teaspoon of bicarbonate of soda into a large Mixing bowl.

Sprinkle in The Little Mill plain wholemeal flour and add the unsalted diced butter.

Rub the butter into the mix with your fingertips, until you have a fine breadcrumb texture.

Stir in the mixed spice, fruit mix and the soft brown Sugar

Pour over the buttermilk and quickly stir with a wooden spoon 

Tip out onto a flour-dusted surface, flour your hands and gently bring the mixture together into a ball

Transfer to a flour-dusted baking sheet

Use a knife to score an x on the top and bake for 40 mins until it is crusty on the outside.  

Do not open the oven while it’s baking.

Check with a skewer and if it comes out clean that means it’s cooked leave to cool upside down in a damp tea towel.
