This week I slow-cooked a 2kg ham joint and had a mountain of it left over (a very technical term I know) I ended up getting 3 dinners out of this one ham, so it was great on the old purse strings too.
I went very traditional Irish with the first dinner with cabbage and parsley sauce, this to me is food for the sole, delicious.
The second leftover dinner I made was my Chinese style fried rice, which is a go-to for any leftover meat as it works well with beef and chicken too, it’s a great Monday special to use up the last of the Sunday roast!
The third dinner I got out of my hunk of ham was a Leftover Ham pie.

TIP: It’s important to use full-fat milk and cheese as higher the fat content in a cheese sauce the less chance of it splitting in the oven
- leftover ham
- 2 tablespoons of corn or garden peas
- a good hand full of spinach
- 1 pack of puff pastry (standard pack 275g)
- 1 egg beaten for egg wash to brush the pastry
For the cheese sauce
- 2 tablespoons of butter
- 2 tablespoons of flour
- 250 MLS of milk
- 150g grated cheddar
- salt and pepper to season
Method (serves 4)
preheat your oven to 180c
In a saucepan over a medium heat melt your butter
When melted whisk in your flour
Slowly add milk quarter by quarter, letting the sauce thicken each time you add
Sprinkle in grated cheese and whisk until its all melted, then season with salt and pepper
In an oven proof dish add chopped leftover ham removing all the fat
Sprinkle over your corn or peas
Then add a good handful of spinach (don’t be shy as it can wilt into nothing!)
Pour over your cheese sauce
Then top with puff pastry and brush with egg wash
Bake in the oven at 180c for 30 mins
and that’s it enjoy
