I put a poll on the facebook page about what to cook this week and this recipe of “Chicken with chorizo pasta” won by a staggering 81%.
I made the choice between this and beef and chorizo pie, (which ill be honest I thought would win hands down)
but the master that is pasta won and I’ve learned a lesson!
I will start using the polls more often on the page too, that way I know what recipes you’d like to try out.
This is a midweek family favourite of ours because it’s so easy to put together!
The tomato and mascarpone sauce makes the overall dish light and creamy and full of all the yumminess! (The little guy’s love that)
You can use lots of other veggies if you,d like to bulk it up (I just stuck with red pepper for this one for my gang ) but spinach, corn , mushrooms, and peas all work really well too.
You can also leave out the chicken or chorizo if you’d like but I think they both really compliment each other.
anything goes with this dish once you have the base of the tomato and mascarpone sauce with the herbs and seasonings.

400g pasta penne
2 garlic cloves
½ white onion
½ red pepper
3 chicken breast s
1 tablespoon oregano
1 teaspoon basil
½ teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon black pepper
A pinch of salt
200g mascarpone cheese
Cook pasta according to packet
Crush garlic and dice onion
Slice red pepper and chorizo
Cut the chicken into Cubes
Heat frylight/ or olive oil in a large saucepan with the lid
Add garlic and onion and fry for 5 mins
chuck in chorizo and fry for another min to release the oil s from it into the pan
Put in your cubed chicken and seal it for 5 mins
Add red pepper and Sprinkle in your herbs and seasoning mixing as to go
Dollop in the mascarpone letting it melt into a creamy sauce
Pour in passata and give another mix together
Finally, drain your cooked penne and add it to the pot
Cover a simmer for 5 mins making sure the chicken is cooked through before serving
Serve with a little shaving of parmesan
