Potato cheese and ham tater tots

Yesterday I made potato croquettes In my stories.
I wasn’t completely happy with the recipe to be honest, or yesterdays photo
so I’ve remade them 3 times since to perfect them and today they are tater tots!
Smaller and more delicious, making the perfect finger food for the smallies,

I’ve tweaked and perfected the recipe and it’s NOW ready to share x This also works well with any left over mash you may have x

Ingredients

5 medium potato mashed (around 300g if using leftover potato)

4 slices of smoked bacon or around 60g cooked leftover ham works too

1 tablespoon of butter

100 g mature cheddar

50g parmesan

1 scallion

1 small bunch of fresh parsley chopped

1/2 teaspoon nutmeg

( the panko style breadcrumbs work well I got these in Tesco)

200 g breadcrumbs ( the panko ones if you can get them)

1 teaspoon garlic powder

1 teaspoon onion

A little salt and pepper

 

Method  

(makes around 18 tater tots )

Peel and boil potatoes for 25 mins over a medium heat

While the potatoes are boiling grate your cheeses , slice scallion and chop parsley

Chop and fry small cubes of bacon on a pan with a little oil until crispy

When the bacon is  crispy remove, wipe out the pan to use it again for your tater tots

 add butter to the boiled potatoes, season with a little salt and pepper and mash

in a separate mixing bowl add breadcrumbs, garlic and onion powder and season  with a little salt a pepper too

Mash potatoes well and mix in cheeses , scallion , bacon, and parsley

Add a ½ tablespoon of nutmeg.

Now mold potato into little tater tots (3 centimeters long 1-inch cylinders )

So they are quite small

cover each tater tot in bread crumbs  ( no need for egg as it gets too messy and the crumb should stick ok without it)

Heat a tablespoon of oil on your pan  over a medium heat

fry 6 tater tots at a time for around 8 minutes

Turning them as you fry

You can keep each batch warm in a low oven until they are all cooked

They will keep in an airtight container for 3 day in the fridge and delicious cold as well as hot.
