Beef Stroganoff is a really tasty way of using up any odds and ends in the fridge, along with that one pack of stewing beef pieces I always seem to have left in the freezer.
This is such handy midweek meal that requires little or no effort, you literally bung it all in a pot and let it cook its self., a great one for the slow cooker too.

500g stewing beef pieces
1 red onion ( diced)
2 garlic cloves ( crushed)
1/2 pack of button mushrooms ( sliced)
1 tablespoon of plain flour
1 heaped teaspoon smoked paprika
1 heaped teaspoon sweet paprika
1 tablespoon of American mustard ( it was the only one I had, any mustard would do except for whole grain)
2 beef stock cubes in 400 mls warm water
Brown beef in a large deep casserole pot with a lid, in a little oil, remove from the pot after 5 mins.
Soften onion and garlic, add mushrooms and then put the beef back in.
Season with a little salt and pepper
Add paprika and mustard and mix
Then flour and mix again
Slowly pour in beef stock
Cover with a lid and simmer for 3.5 hours
Add a good dollop of creme fraiche or sour cream after the 3.5 hours ..
garnish with fresh parsley and serve with rice…
