Crispy cod pieces in honey and soy sauce

Crispy cod in honey and soy whats not to love eh?

I’m always trying to get more fish into my guys, and although cod can sometimes be the easy way out, it works really well in this recipe. The honey adds a delicious sticky sweetness and the tang of the vinegar really evens the whole dish out. As you may already know I’m a huge Chinese food fan and this recipe is a huge nod to that.

lils went nuts for this one when she first tried it and declared that daddy is just going to love it (i shared the video to the home cooks fb group and we had a great laugh, she’s turning into a right little character.

(Ah, lads, I can believe shes for school in September!  its such a cliche but it does go in to fast)

Ingredients

4 cod fillets chopped into cubes

4 tablespoons of cornflour

1 teaspoon of garlic powder

1 teaspoon of onion powder

1 egg whisked

Honey sauce

4 tablespoons of honey

2 tablespoons of soy

1 teaspoon of rice wine vinegar

For the wok

3 tablespoons of sesame oil

2 garlic cloves crushed

1 centimetre cubed of ginger

1 onion sliced

1 sliced red pepper

a sprinkle of sesame seeds

Method (Serves 4)

You will need a large wok

Mix your corn flour with garlic and onion powder in a mixing bowl,

Chop your cod fillets into cubes and season with salt and pepper

Crack the egg into another mixing bowl and whisk

Dip each cod piece into egg and then coat in cornflour, repeat until all cod is covered and leave to one side until you make your sauce

Mix honey, soy and rice wine vinegar together in a separate bowl

Crush garlic, chop ginger and slice onion and pepper

Put the wok on a medium heat and add the sesame oil, heat for a min

Add the coated cod, 6 pieces at a time, fry on each side until crispy, remove with a slotted spoon when all the cod is fried and leave to one side.

Add ginger and garlic to the same sesame oil when cod is removed and fry for a minute

Now chuck in the sliced onion and pepper and fry for another 5 minutes

Pour over the honey sauce and add the cod back in

Give a good mix and sprinkle over some sesame seeds

Serve with rice or noodles
