Skinny Sausage hotpot

How can I create healthy family recipes and still put on weight I hear you ask?
I could blame the snow and the long winter, writing, photographing and tasting all the food in my cookbook, but I won’t…
The simple fact is I just love food and wine, 
I live to cook and when I take my eye off the ball, the jeans will start getting tighter and tighter.

I find slimming world works best for me to curb it
So here I am
The aim is to get my self into a lovely dress for the book launch,

I’ll keep u posted on how I’m doing..

I posted this recipe for ” skinny sausage hotpot” over in the group and it went down an absolute storm!

The sausages I used were Loughnane’s Skinny Sausages  ” these are low in fat and taste as good as any regular

I can’t wait to hear how you get on with this one x 

 

Skinny Sausage hotpot

Ingredients

  • 3 Loughnane’s Skinny Sausages chopped
  • 2 garlic cloves
  • 1 chopped onion
  • 1 sprig of fresh rosemary and some to garnish
  • 1 red pepper
  • 1 green pepper
  • 2 tablespoons of corn
  • 1 oxo beef stock cube
  • a teaspoon each of garlic and onion powder
  • 100 mls water

Method

Spray a large pan with fry light and place over a medium heat

fry off the chopped onion and 2 cloves of garlic

add some chopped fresh rosemary and sliced Loughnane’s Skinny Sausages to the pan, brown  for around 8 minutes on the

chuck in some corn and sliced  green and red pepper

season with salt and pepper and crumble over a beef oxo stock cube

sprinkle over a teaspoon of garlic and onion powder

pour over 100 MLS of water

Turn the heat up on the pan so the sauce reduces,s and thickens .. when the sauce is thick serve..
