Give us this day our daily bread

The one thing we have learned this week with the snow is that we are a nation of bread lovers!

It’s always handy to have an easy white loaf recipe up your sleeve and I’ve been making this one for a while, and this one works out every time

an added bonus is that the amazing smell that will be wafting around the house! The neighbors will be thinking you selling up.

You do have to leave it to rise twice but the results are well worth it

serve with my homemade cream of veg soup for the ultimate in comfort food to get you through the cold snap

I really hope this gets you through the next few days until our bakery shelves are well stocked up

 

Ingredients

(makes 2 loaves)

  • 65 mls of lukewarm water
  • 1 tablespoon of  active dried yeast
  • 2 tablespoons of caster sugar
  • 450 mls warm milk
  • 30g butter at room temperature
  • 2 teaspoons of salt
  • 850g strong white flour

 

Method

combine water yeast and 1 tablespoon of the sugar in a measuring jug and leave to stand for 15 minutes

pour the milk into a large bowl, add the other tablespoon of sugar with the butter.

now stir in the yeast mixture

add in the flour quarter by quarter mixing as you add

you will now have a stiff dough

tip dough onto a floured surface

flour your hands and give a good knead

place the dough into a large greased bowl

put a tea towel on top and leave in to rise somewhere warm (I put mine under the stairs) until its doubled in size this takes around 2 to 3 hours

grease 2  9×5 loaf tins

check the dough and give it a little punch with your fist

cut it half, form 2 loaves and place into prepared tins

cover with a tea towel and leave to rise for a further 45 mins

Preheat oven to 190c

bake until firm and brown for 45 mins

let cool on a rack

cut and slather with real butter and serve with soup
