how are you all hanging in there?
it’s been 4035 days since I’ve left the house with snowmageddon 2018. Now I, ll be honest with you, I was delighted with the snow on Thursday and Friday.
It was a novelty, Everything was looking picturesque, the kids were building snowmen I had enough supplies in (wine ahem) and the deadline of my cookbook was looming.
So it was a great excuse to batten in the hatches and get everything finished.. which I did on Friday!! yippee
But today I’m done with it and ready for the thaw!
The supplies are nearly gone, I looked in the goodie press and we, re down to 2 packets of chickatees and a packet of sunflower seeds that I got at some blogger event (and let’s be honest, it,s a sure sign of a crisis when I start eating sunflower seeds)!
I’m that desperate for things to get back to normal, I actually started clearing the snow!
Well, every single house in the estate was out clearing the snow today, planning the great escape, dreaming of bread and milk filled shelves that are all a distant memory.
on the menu today we had a really tasty leftover creamy chicken tagliatelle, a handy recipe to have up your sleeve if the cupboards are practically bare.
Which is half the country’s cupboards are so I thought It would be a nice one share
- leftover cooked chicken (or 4 raw chicken breasts if you don’t have leftovers )
- 2 garlic cloves
- 2 celery stalks
- 2 tablespoons of sweetcorn
- 1 heaped tablespoon of flour
- 300 mls liquid 150 mls hot chicken stock topped up with 150mls milk
- 1 heaped teaspoon of dried tarragon
- 400g of tagliatelle (or any pasta)
(serves 4) you will need two saucepans
cook tagliatelle according to the packet
place your saucepan over a medium heat on the hob
add a little olive oil
crush garlic and slice celery and add it to the saucepan with the corn
put in your cooked leftover chicken, if using raw chicken add it to the saucepan and cook for 8 mins
sprinkle in the tablespoon of flour and give a good mix
add in your liquid quarter by quarter mixing as you add
season with salt and pepper
finish with dried tarragon
turn down to a simmer cover and cook for another 5 mins if using raw chicken.
if using leftover cooked chicken its ready to add the pasta
when tagliatelli is cooked drain and add it to the creamy chicken sauce
mix well and serve straight away
