This recipe of creamy cajun spiced chicken is so easy and a perfect one for a summer’s evening when you, re on the go all day and want to cook up something quick, tasty and handy for tea. It’s lovely paired with rice or pasta but also works well with wedges and salad. With only a few ingredients it can be knocked up on the pan in a flash with creamy spicy flavours that won’t disappoint.
If you like your own with a bit extra spice you can buy an extra spicy Cajun spice in the Schwartz range, that’s the one I like to use but it does have a fair old kick from it (be warned) go easy on the kids!!
Ingredients (serves 4)
- A teaspoon of olive oil/ Fry light
- 4 chicken breasts
- 2 cloves of garlic
- 1 onion
- 1 red pepper
- 2 tablespoons of cajun spice mix (i use Schwartz for this one)
- 2 tablespoons of creme Fraiche
- a sprinkle of fresh thyme
(you will need a large pan)
heat your oil/fry light pan on a medium heat
chop onion finely crush garlic, slice pepper and cut chicken into bite-size chunks
add your onion to the pan and fry for 5 mins until softened add cajun spice and fry for another min
chuck in the garlic and chicken and cook for 10 mins
turn the pan down to low
add the red pepper and soften for around a further 5 mins
. and creme fraiche .. and a little water if you need it
finish with a sprinkle of fresh thyme
and that’s it!!
