southern baked chicken

Why does all the bad food, taste so good? Southern fried chicken in a bucket,  It is finger licking good because it’s full blinking of grease, which is ok in moderation I know. But what if I told you I have a recipe for Southern style chicken that,s actually healthy enough to have every night if you wanted to!!  My Southern baked  Chicken recipe tastes just like a bucket of chicken but with all the good stuff in it. Chicken pieces with the skin and visible fat removed, dipped in egg and wholemeal breadcrumbs, and my 7 not so secret spices!! Its basically, chicken and brown bread, baked in the oven. So much cheaper than a bucket too and you know what, I always feel So proud when I,ve breaded my own chicken, its like getting one up on the colonel himself 😉

Ingredients

  • 6 chicken Thighs
  • 80g wholemeal breadcrumbs, around 4 slices wized up (Hovis nimble for slimming world)
  • 1 egg
  • 1 tablespoon cayenne pepper
  • 1 teaspoon paprika
  • 2 teaspoons of garlic powder
  • 1 oxo chicken stock cube
  • 1 teaspoon of rosemary (i use fresh herbs and i think they work better, but you can use dried)
  • 1 teaspoon of parsley
  • 1/2 teaspoon thyme
  • Salt and pepper to season

 

Method  (you will need 2 mixing bowls, one baking tray and a pair of scissors )

Preheat oven to 180c fan , gas 4southern baked chicken

ok this is the messy bit.. get a good sharp pair of scissors and cut all the skin and visible fat off your chicken pieces, leaving the bones in.

wizz up your breadcrumbs and add them to a large mixing bowl with all your herbs and spices , season with salt and pepper.

beat an egg and put it in another bowl…

spray your baking tray with olive oil or fry light

now for the fun bit!! get a chicken thigh and dip it in egg, covering the whole piece, now put the chicken piece into your spiced crumb and give the bowl a  good old shake making sure you have the whole piece of chicken covered,

Place your chicken carefully on your baking tray… follow the same steps with all the chicken..

when all the chicken is crumbed, cook in the oven for around 40 mins, until the outside is golden and crispy.. The chicken itself will be so juicy

serve with corn on the cob and potato wedges, for maximum deep south effect!!
