Pick and Mix Fajitas

kids love dinners that they can pick and mix up themselves, loading their plates up with the stuff they like. With my pick and mix Fajitas,  I split the chicken and the vegetables, into two sections that way everyone can dig in and grab their favourites. (no moaning! parenting win)  The Fajita spice is very mild (especially for the smallies who aren’t used to spicy food)  but if you want to make it a bit spicier, just turn up the heat by adding extra cumin, cayenne pepper and paprika. (these 3 spices are the basis to any fajita or chilli recipe mixed with tomato or passata ).

note:  if all your kids eat veggies and chicken ( lucky you, can they come live with me? ) you don’t need to separate the mix, but it is nice to give them an option.

Ingredients (serves a family of 4)

chicken mix

  • 4 chicken breasts
  • tablespoon of corn (optional)
  • 1 garlic clove crushed
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of garlic powder
  • 1 teaspoon of oregano
  • 1/2 teaspoon cumin
  • pinch of brown sugar (optional)
  • 1 tablespoon of tomato puree
  • 200 ml of passata (1/2 carton)
  • season with a little salt and pepper

Vegetable mix

  • 1 red onion sliced
  • 1 red pepper sliced
  • 6 mushrooms sliced
  • 1 garlic clove crushed
  • 1 teaspoon of cayenne pepper
  • 1 teaspoon of paprika
  • 1 teaspoon of oregano
  • 1 teaspoon of garlic powder
  • 1/2 teaspoon cumin
  • pinch of brown sugar (optional)
  • 1 tablespoon of tomato puree
  • 200 ml of passata (1/2 carton)
  • season with a little salt and pepper

Method

Chicken mix

heat a spray of frylight or olive oil on a medium heat in a large pan

chop chicken and add it to the pan with crushed garlic, cayenne pepper, paprika and garlic powder.

cook for around 5 mins and add the tomato puree and cook for another 5 mins.

pour over passata and add in the corn, season and leave on a low heat to simmer for 30 mins

vegetable mix

heat a spray of frylight or olive oil on a medium heat in a  pan

slice all veggies into thin strips, add veggies and stir fry for around 5 mins until the veg has softened

add the crushed garlic, cayenne pepper, paprika and garlic powder. (just like the chicken)

cook for around 5 mins and add the tomato puree and cook for another 5 mins.

pour over passata, season and leave on a low heat to simmer for 30 mins

simple tomato salsa

1 large tomato chopped, 1 spring onion, a squeeze of fresh lime finish with a sprinkle of fresh coriander, season with a little salt and pepper

serve with warm tortilla wraps, creme fraiche, plain rice and grated cheese and let everyone dig in

ps for any of you adults doing slimming world this recipe is FREE on extra easy (you would have to syn the brown sugar, creme Fraiche and cheese if using it)

  1. We’ve only done fajitas with BattleKid once so I think it’s time we did them again. I think I’ll follow your recipe this time rather than doing a packet one!

  2. We love fajitas in our house and it’s one thing my kids would never complain about! I so know what you mean about keeping everyone happy though, and it makes life a lot easier to offer alternatives without making entirely different meals (which I would never do). Your fajitas sound delicious!
