Best Ever, (really easy ) Chicken Satay

Chicken Satay is one of my favourite dishes, with that in mind I, ve rewritten this recipe so many times, practised it, cooked it and didn’t want to put it on the blog until I perfected it. You can have this dish two different ways. On skiers or with added chicken breast.  The kids prefer it on skewers (put food on a stick and the kids here will always eat it ) I prefer it simply with added chicken breast. You can chuck in some pineapple, green pepper, mushrooms if you want to up the veggie intake, but to be honest I like it as it is and serve stirred fried veg on the side. Enjoy

Ingredients 

  • tablespoon of sesame oil
  • 4 chicken breasts
  • 1 onion
  • 2 garlic cloves
  • 1-centimeter cube of fresh ginger grated
  • 2 tablespoons of mild curry powder (or hot if you like it spicy)
  • 1 tablespoon soy sauce
  • 3 tablespoons sweet chilli sauce
  • 1/2 teaspoon of chilli powder (depending on how hot your family like it)
  • 3 tablespoons crunchy peanut butter
  • 150 MLS water
  • 1 tablespoon of pineapple chunks (optional)
  • garnish with coriander

 

 

Method 

(serves 4)

Preheat oven to 180C , 160C fan, gas mark 4

If you skewering the chicken you can get the kids to do it (just chop the chicken for them) skier chicken and cook in the oven for around 25 mins turning once .. check the sides near the skiers before serving to see if it’s completely cooked.

if you just fancy a chicken satay (no skewers) grab a baking tray for your chicken, cover the chicken and tray with tin foil and bake in the oven for 25 mins…

now for the sauce …….

heat sesame oil   a wok and add  chopped onion, fry until it’s soft

chuck in your crushed garlic clove and grated ginger and fry for a minute,

stir in the curry powder and let it cook for another minute (the smell will be amazing)  water it down with the soy sauce.

finally, mix in sweet chilli sauce, chilli powder,  peanut butter and stir

add the water to loosen the whole recipe… blend well with a stick hand blender

finally, add to cooked chicken chunks or cooked chicken skiers… chuck in some pineapple if you fancy

Serve with Rice x
