Sausage Casserole

Sausage casserole, or “saw ships”  casserole that’s what yum calls it !
Comfort food season has landed with warming stews, casseroles and hot pots. To be honest I could eat this type of grub all year round. Food with so much comfort it gives you a hug on a cold day.   When buying a for a good quality sausage look for a high pork content,  in and around 70 % and above. This dish is super easy to cook and with good pork sausage packs a punch in the flavour department!

I serve it piled high on top of rice and never have any leftovers to freeze,,, (plates are licked ) no shame

Ingredients

  • 12 good quality pork  sausages
  • 1 onion
  • 2  garlic cloves
  • 1 red pepper
  • 1 carrot
  • 100 g sweetcorn
  • 100g kidney beans (optional)
  • 1 tablespoon of sweet paprika
  • 1 tablespoon of tomato puree
  • 1 carton of passata 400g
  • 1 teaspoon of brown sugar (optional)

Serves a family of 4 sausage-casserole-1

Method

you will need a large pan with a lid

Chop your sausages and veggies into bite size chunks

crush the garlic clove

heat a pan on a medium heat with a teaspoon of olive oil.. fry up the sausages for around 10 mins getting a bit of colour on them and scoop with a slotted spoon and leave to one side

Now add the onion and Garlic to soften in the pan for 5 mins and then  your carrot and red pepper

chuck the sausages back into the pan, and pour over the corn and kidney beans and give a good mix

sprinkle over paprika and, season with salt and pepper

pour on passata and a tablespoon of tomato puree and mix well, sprinkle with your brown sugar…

cover and simmer on a low heat for 50 mins  sausage-casserole-3

serve with rice… and try to share with the kids x
