Sausage Casserole

Winter has arrived with a bang, with no warning. Comfort
food season has landed, warming stews and casseroles that give you a hug with every bite on a cold day. (I love snuggling in on a winter evening)  with a huge bowl of this sausage casserole.  It’s super easy to cook, packs a flavour punch and is  a family favourite in One Yummy Mummy hq.. we serve it piled high on top of rice and never have any leftovers to freeze,,, (plates are licked ) no shame

  • 12 good quality pork  sausages
  • 1 onion
  • one garlic glove
  • 1 pepper
  • 1 carrot
  • 1 tablespoon of sweet paprika
  • 1 tablespoon of tomato puree
  • 1 carton of passata 400g

Serves a family of 4 sausage-casserole-1


Pre-heat oven  180c gas mark 4 you will need a deep frying pan (or a wok) and a casserole dish

Chop your sausages and veggies into bite size chunks

crush the garlic clove

heat a pan on a medium heat with a teaspoon of olive oil.. fry up the sausages for around 10 mins getting a bit of colour on them and scoop with a slotted spoon and leave to one side

now add the veggies and Garlic soften for 10 mins  chuck back in the sausages and the paprika and mix, season with salt and pepper

pour on passata and add a tablespoon of tomato puree and give a good mix…

cover and simmer on a low heat for 50 mins  sausage-casserole-3

serve with rice… and try to share with the kids x
