Everyone needs a good Thick Chicken and veg soup in their life. This one is one of my most popular recipes. I’ve had so much positive feedback on it over on the fb page. One Mother said her 1-year old just loves it shovelling it up with his hands while he devours it. Another mother was feeling poorly and it nursed her through her flu (she swears by it) just call me doctor Yummy! Finishing with a dad who cooks it every week for his lunch at work! (and that’s just a few) Join in on the chat over on the facebook page . This soup makes the perfect starter or is a meal in itself partnered with my Easy homemade bread rolls .
Ingredients for thick chicken and veg soup (makes 4 good sized bowls)
- 1 tablespoon of margarine/butter/ few sprays of fry light for sw
- A onion
- 1 small leak or half a big one
- 2 celery stalks
- 2 small potato,s
- 4 carrots
- 1 pint of hot chicken stock
- 4 cooked chicken breasts
- 200 mls of milk
Cook your chicken breasts … set oven to 180c gas mark 4…. Put your chicken breasts on a baking tray, no need for oil. Cover the tray with tin foil and bake for 2o -25 mins …
while the chicken is cooking…
Peel and chop all the veg.. (don,t be too fussy you will be blending it)
Get a large saucepan (with a lid) and melt the margarine over a medium heat/ or spray a few sprays of frylight…
Add the chopped onion, celery and leek to the melted margarine put on the saucepan lid and soften for around 10 mins.
when they’ve softened add the carrot and potato and stir for 5 mins.
pour in the pint of chicken stock and cover with the lid.. leave on a simmer for 40 minutes until all the veg has cooked
Take the chicken breasts out of the oven when cooked (after 20/25 mins ) and chop them.. they will be nice and juicy.
blend the veggies when soft, this soup will be nice and thick.
Add milk… and chopped chicken breasts… and give 2 quick shots of the blender.. not too much as it will end up bitty with the chicken (add more milk/water if too thick for your taste)…
