Prawn and Corn Noodles

prawn and corn noodlesSo the past two weeks have been mad busy here… I got a new kitchen … YIPEE.. which meant I couldn’t cook for a week and a half (that was really tough).. lucky enough I got to swan off to London with Netflix in between (jammy I know) and spend the weekend with “One yummy Sister” to get away from the Mess…

Alas…. yesterday it all came together.. the kitchen is completed and I’m over the moon with it… ( it has totally exceeded my expectations.. Blog post to follow) I was putting all my pots and pans back and sorting  all the shelves (kinda just playing in the kitchen) When “yum” came in a asked “are you cooking noodles? because my tummy is ready for them!”

I had a quick look in the cupboard and the freezer and knocked these up… in around 15 mins.. you can add of course any other veggies you have… For any Slimming world guys these work out at  around 1 syn portion …

  • a glug of sesame/olive oil / or fry light for sw
  • 1 handful of frozen prawns
  • 1 handful of frozen corn
  • 1 onion  chopped finely or grated.
  • 2 garlic cloves
  • 1 tbsp of honey
  • 2 tbsp of soy sauce
  • 1 tbsp of sweet chilli sauce
  • 1 tbsp of oyster sauce
  • 2 portions  of dried noodles (I use Blue Dragon fine egg noodles 300g )

heat a large pan / wok with olive oil/ sesame oil /fry light

Put your noodles into boiling water and bring back to the boil for 5 mins.. stirring to separate them ….

prawn and corn noodles for blogafter 5 mins.. drain your noodles … rinse them well with cold water… (this prevents them from sticking) also spray the noodles with fry light or olive oil and leave to one side for a min

to the hot wok.. add onion, corn  prawns and garlic and stir.. cook for 10 mins

add  the lovely ,honey, soy sauce, sweet chili sauce and oyster sauce and mix…

finally, add the noodles and mix everything through…

finish with a little black pepper.. (i added some dried green onion i got in Lidl , From when they were doing a Chinese weekly special.. but that’s optional )

and thats it!!!! serve and   Enjoy x
