Cauliflower crust pizza, it just sounds wrong, doesn’t it? I’ve been trying to perfect this for a few weeks and today’s creation was by far the best. (so good I made 2 and kept a base for the next day) .. so I, ll tell you about my past efforts.. the first attempt I used fresh cauliflower and it took ages to blend.
I decided to experiment with frozen, with much better results… the 2nd time I didn’t wring out the cauliflower with a tea towel.. this is so important for a firmer crust.. the 3rdItime i decided to add dried herbs (like my cloud bread pizza). So after 5 attempts …
I,ve came up with this one… This is a great alternative to pizza, but it isn’t a pizza (if you fancy a pizza , just make this one..) if your looking for a guilt free one for yourself , that hides the veggies for the kiddies.. then this is a great option.. “yum” and I ate a whole one for lunch between the two of us. And wait till I tell you what iIdid with the extra, crust. I made a sweet chilli ham wrap for lunch the next day.. which was surprisingly moreish..

450g frozen cauliflower
1 garlic clove
1 teaspoon dried oregano
1 teaspoon dried basil
40g grated cheddar (Dubliner Cheese Light White Cheese Block is a healthy extra A)
your favourite pizza toppings
A clean tea towel and a blender.
Leave you cauliflower to defrost over night in the fridge or blanch it for 8 mins
line a pizza/ baking tray with grease proof paper and spray with olive oil/frylight
heat your oven to 180c gas mark 4
blend the cauliflower to a rice-like consistency, blending a quarter of the pack at a time.
place onto a clean tea towel, when its all blended.
wrap it in the tea towel and squeeze out any excess water.. give it a good squeeze now and
put it into a clean mixing bowl
add garlic and herbs and give it a good mix.. add in your beaten egg and mix again.
place the cauliflower rice on to the baking tray .. pressing it down moving it out to the edges …
bake in the oven.. for 30 mins, flip over and bake for a further 10.
top with tomato puree and cheese and your fave toppings, place under the grill to melt … and demolish.
