Easy Cheesy Pasta

sometimes your just not in the mood to cook… no matter how much you love your kids , how much nutrition meansEasy cheesy pasta final for blog to you,  how many times they,ve asked you “what’s for dinner mam” a million times. Sometimes the day just runs away with you… between, playdates, school drops/pick up, after school activities, work , housework, the heat, the last thing you want to do is cook… This easy cheesy pasta is a good one to have up your sleeve on days like that. It takes around 40 mins to cook, and you can use up any leftover cooked meat you have in the fridge.. (boiled smoked gammon is delish)  you can throw in cooked chicken if you have it. If you have no leftovers just use smoked bacon or regular chicken breasts. The kids love it, you have my word “easy cheesy pasta” will be milled in 5 minutes flat.. There’re a few veggies flung in there too for good measure x

(any slimming world folks this recipe is free using 40 grams Dubliner Cheese Light White Cheese  grated (healthy extra a for sw) , and fat-free creme fraiche.. its 6 syns for the lot if you have used up your hex a) and serves a family of 4 easily … any leftovers let completely cool and chill up to 3 days or freezedubliner cheese

Ingredients

  • leftover cooked meat or smoked bacon/ chicken breasts
  • 1 grated onion
  • 2 celery stalks
  • 1  orange pepper (you can use red or green but orange works well)
  • 1 garlic clove
  • 1 chicken stock cube
  •  250 g pot of creme fraiche / fat-free for slimming world guys
  •  40 grams Dubliner Cheese Light White Cheese  grated (healthy extra a for sw) I use Dubliner cheese because twitter pic for the Dubliner challengeit’s creamy with a lovely kick.. it was also only €2 in Tesco for the block this week 😉
  • 250 g fusilli pasta (around half a pack)

Method

(you will need a frying pan, a saucepan and an ovenproof dish)

cook pasta according to packet

spray the pan with olive oil/ fry light and put on a medium heat

If using raw chicken breasts or smoked bacon chop and put on the pan, fry for around 10 mins,  then add your chopped veggies and grated onion, and crushed garlic clove

if using cooked meat just throw it on the pan with the veggies.. and cook for 10 mins

crumble in the chicken stock cube and add the tub of  creme fraiche and mix in with the meat and veggieseasy cheesy pasta final

grate 40g,s of Dubliner light white cheese.

Drain the cooked pasta and add it to the meat and veg and mix on the pan.

Transfer it all to an ovenproof dish and top with the Dubliner light white cheese

whack it under the grill to melt the cheese,
